No Misters!
Radicchio does not require misting! The misting leads to a higher shrinkage factor and a higher labor cost. The misting causes browning and the constant need for re-trimming.

No knives
Do not use metal knives to re-trim, this causes the product to breakdown faster. If you must use a knife, then a ceramic knife is recommended.

Keep Radicchio Cool
Storing radicchio between 34–36 degrees Fahrenheit is the appropriate temperature for keeping the radicchio fresh and lends to a better presentation. Keeping radicchio away from wet produce such as broccoli is a must. Proper storage and in-store placement will lead to higher sales because the radicchio will be fresher and heavier.
