Keep Radicchio Dry
Properly storing your radicchio can help you save a lot of money. Radicchio is a very hearty vegetable and likes to be kept at a constant 34 to 36 degrees Fahrenheit. Never store your radicchio near wet items such as broccoli. Radicchio should remain very dry. Moisture begins the decay process, resulting in brown discolored leaves that need to be removed. You want to avoid this form of shrink and keep radicchio dry.

Avoid Knives
If you do need to trim your radicchio avoid using knives. Knives damage the radicchio and cause it to break down. Simply trim by pulling the discolored leaves off by hand. By properly storing the radicchio you will see a definite difference in shrink.
