Wild Thing Pasta Salad
Take this to a potluck or serve to your own lucky family. Perfect alongside roasted or grilled salmon.
6 servings
8 ounces penne pasta, cooked, drained and cooled slightly
1 head frisee, cleaned and chopped
1 cup mushrooms, sliced
1 red bell pepper, seeded and diced
1/4 cup olive oil
1/4 cup red wine vinegar
2 cloves garlic, crushed
Salt and freshly ground black pepper, to taste
1 cup crumbled blue cheese
1/4 cup toasted walnuts, coarsely chopped
In large bowl toss together pasta, frisee, mushrooms, and bell pepper. In small bowl whisk together oil, vinegar, garlic and salt and pepper; pour over salad and toss well. Add cheese and nuts, toss again and serve immediately.
Shortcut Version
Wild Thing Pasta Salad
2 cups cooked and drained penne pasta
1 head frisee, cleaned and chopped
1 cup sliced mushrooms
1 1/2 cups diced red bell pepper
1/2 cup garlicky vinaigrette
1 cup crumbled blue cheese
Toss all ingredients together gently but thoroughly in large bowl. Garnish with toasted walnuts, if desired. Serves 6.
