Frisee, Radicchio and Apple Salad
with Sweet-Hot Dressing
Serves 6
This combination is perfectly suited to being garnished with crumbled bacon or paired with succulent grilled smoked sausages and a warm loaf of crusty bread.
1 head frisee, cleaned and chopped
1 head radicchio, cleaned and chopped
2 crisp, tart apples (like Granny Smith), cored and diced
4 green onions, thinly sliced
1/3 cup cider vinegar
2 tablespoons brown sugar
1 tablespoon vegetable oil
1/2 teaspoon Worcestershire sauce
1/4 teaspoon hot pepper sauce
1/4 cup chopped hazelnuts
In large serving bowl toss together frisee, radicchio, apple and onion. In small saucepan combine vinegar, sugar, oil, Worcestershire and hot pepper sauce; bring to a boil, stirring. Pour over salad and toss to coat. Add nuts and toss again. Serve immediately.
Shortcut Version
Red & Green, Sweet & Sour Salad
Serves 6
1 head each frisee & radicchio, cleaned and chopped
2 tart green apples, cored and diced
4 green onions, sliced
1/3 cup cider vinegar
2 tablespoons brown sugar
1 tablespoons vegetable oil
1/2 teaspoon Worcestershire sauce
1/4 teaspoon hot pepper sauce
Toss together frisee, radicchio, apple and onion in large serving bowl. Stir together remaining ingredients in small saucepan over high heat, bring to a boil; pour over salad and toss well. Serve immediately, garnished with chopped hazelnuts, if desired.
