Sweet grapes and pecans, smoky ham and nutty Swiss cheese perfectly complement the fresh, bitter flavor of frisee.

Frisee Salad with Ham, Cheese and Red Grapes
This makes a nice, light main dish salad. Accompany with potatoes dauphinoise for a hearty menu.
4 main dish servings

1 head frisee, cleaned and chopped (about 4-5 cups)
4 cups mesclun, washed and dried
4 ounces smoked ham, thinly sliced and shredded
3 ounces Swiss cheese, cut into matchstick-size pieces
2 cups red seedless grapes, halved
1/4 cup toasted pecans, coarsely chopped
3 tablespoons olive oil
2 tablespoons red wine vinegar
Pinch of sugar
Salt and freshly ground black pepper, to taste

In large bowl toss together frisee, mesclun, ham, cheese, grapes and pecans. In small bowl whisk together oil, vinegar, sugar, salt and pepper. Pour dressing over salad, toss well to coat. Serve immediately.

“Shortcut” version
Ham & Cheese Frisee Salad with Grapes
4 main dish servings

1 head chopped frisee, tossed with 4 cups mixed greens
1 cup diced ham
1 cup diced Swiss cheese
2 cups halved red seedless grapes
Vinaigrette dressing

Toss all ingredients together in large serving bowl; garnish with toasted pecans if desired.
