Called "cavolo nero" in Italy, Tuscan Cabbage is a staple in Tuscan country cooking. It is a kale rather than a true cabbage. This distinctive vegetable has dusky-green leaves in a shape similar to palm fronds. It is also known as Tuscany palm tree cabbage or Tuscan kale.

Preparation:
Tuscan Cabbage is very versatile and is used in Italian country cooking, particularly in the Tuscan region. Tuscan cabbage is served often as a side dish or as a main ingredient in stews, soups and sauces. It can be braised, pureed into pesto or stuffed with rice or meat.
