Tardivo is considered a Fiori d'Inverno or "winter flower" because it is only available from November through March.

The elegant radicchio
Tardivo comes from the more common Radicchio di Treviso, that after the first frost undergoes a complicated growing-forcing method. Tardivo grows into a uniquely shaped strong plant. It has elongated leaves with pronounced white ribs tinged with red.

Preparation:
Tardivo is more flavorful than milder Treviso. Its stronger bitter accents and crisp consistency make it delicious sautéed in extra virgin olive oil and served as a side dish.

Availability: This winter vegetable is usually available November through March.
