Red Radicchio Adds Seasonal Color To Holiday Salads
Salinas, California -- Planning your color scheme for the holiday table? Red and green are favorites. Trendy pastel tints of the same colors are also a hit. Let your menu selections lend support to the theme.

Most lettuces will make the green base of any fresh salad for the holidays. Boston, Butterhead, Romaine, Iceberg or Green leaf lettuces are as close as your supermarket produce section. Brilliant radicchio, dried cranberries, dried cherries, pomegranate seeds, and ruby red grapefruit are nutritious, scarlet selections for the meal.

Radicchio is a delicious way to add color to the holiday dinner table. Its red color makes it the perfect holiday “green.” Radicchio’s intense flavor partners deliciously with other vibrant, favorites such as pungent cheeses, smoked meats and fruity olive oils.

When it comes to selecting radicchio, consumers may want to ask their local stores to carry domestically-gown radicchio –which is fresher and bigger. Imported radicchio, which typically arrives in this country by boat, must constantly be trimmed. It often is trimmed down to tennis ball size by the time it is purchased. Consumers want fresher product so they can take full advantage of radicchio’s versatility for fresh salads and side dishes.

Based in Salinas, California, EVS Farms is the largest grower of radicchio in the world and sells its product under the Royal Rose brand name. EVS is the first in the world to harvest fresh radicchio on a daily basis. Harvesting daily allows EVS to deliver Royal Rose radicchio to the U.S. market some three to four weeks fresher than imported product from domestic storage programs or from imported from Italy or Chile.
