The Elegant Radicchio

Tardivo is considered a Fiori d'lnverno or "winter flower" because it is only available from November through March. Tardivo comes from the more common Radicchio di Treviso, that after the first frost undergoes a complicated growing-forcing method. Tardivo grows into a uniquely shaped strong plant. It has elongated leaves with pronounced white ribs tinged with red.

Preparation:

Tardivo is more flavorful than milder Treviso. Its stronger bitter accents and crisp consistency make it delicious sautéed in extra virgin olive oil and served as a side dish.
